The grapes for the 2014 Hathersage Bistro White were destalked and crushed with no skin contact to avoid oxidation of this delicate wine.
The juice was cooled to 10 degrees Celsius for 48 hours to obtain clear grape juice before yeast was added.
Thereafter a controlled fermentation temperature of 17 degrees continued for a further three weeks. The wine was given extended yeast contact after fermentation to allow for maximum avour, varietal and chemical stability.
On the nose, Hathersage Bistro White has developed a bouquet dominated by passion fruit and elderberry owers. This is a lovely easy-drinking wine with a long nish that tends to avours of ripe gs.
Hathersage Bistro White is a wonderful aperitif. A perfect companion to fresh oysters, prawns, langoustines, and lightly grilled sh dishes. It pairs well with those dishes that contain a classic mix of Italian spices
